    03 Method
    • Step 1
      Heat olive oil in a Dutch oven or large pot over medium-high heat. Add garlic, bell peppers, onion, carrots, and mushrooms. Cook, stirring frequently until carrots begin to soften, about 8-10 minutes.
    • Step 2
      Stir in cumin, chili powder, and oregano; season with salt and pepper, to taste.
    • Step 3
      Add ground turkey and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks.
    • Step 4
      Stir in beer and reduce heat to low; simmer, covered, until slightly thickened, about 15 minutes. Stir in tomatoes and beans and simmer until thickened, an additional 15-20 minutes.
    • Step 5
      Serve immediately.
