Ingredients
2 eggs, beaten

2 tbsp. honey or maple syrup
1 cup buttermilk
1/2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
2 tbsp. coconut flour
3/4 cup gluten free flour
1 cup stone-ground cornmeal
8 tbsp. unsalted butter

Method
Step 1
Preheat over to 375ºF, add your butter to an 8 inch cast iron skillet and place in the oven while it heats.
Step 2
In a large bowl, whisk together the cornmeal, flours, salt, baking powder, and baking soda.
Step 3
Remove skillet from oven and pour melted butter into the bowl. Note: it’s fine for some butter to stay on the skillet.
Step 4
Whisk in the remaining ingredients until combined. Pour the batter into the skillet and place back in the oven.
Step 5
Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
