      • Rice, for serving
      • 1 tsp. Sesame oil
      • 2 tsp. Sambal oelek
      • 1 tsp. Cornstarch
      • 1/4 cup Low-sodium soy sauce
      • 2 tbsp. Sherry
      • 4-6 Dried chilis
      • 1 Red bell pepper, chopped
      • 1 Large head broccoli, cut into small florets
      • 1 Sliced piece ginger, minced
      • 4 Boneless, skinless chicken thighs, cut into 1" pieces
      • 3 tbsp. Canola oil, divided

    03 Method
    • Step 1
      Heat 2 tbsp canola oil in a large skillet over medium-high heat. Add chicken and fry for 7minutes until cooked through, then remove from the pan.
    • Step 2
      Heat remaining canola oil in the same pan. Add ginger and cook for 1 minute until fragrant. Then, add broccoli, bell pepper and red chili for 5 minutes until vegetables are tender.
    • Step 3
      Mix sherry, soy sauce, cornstarch, sambal oelek and sesame oil in a small bowl. Add to the pan and simmer for 3 minutes until the sauce thickens. Add chicken back to the pan and toss to coat. Serve over rice.
