Method
Step 1
Heat 2 tbsp canola oil in a large skillet over medium-high heat. Add chicken and fry for 7minutes until cooked through, then remove from the pan.
Step 2
Heat remaining canola oil in the same pan. Add ginger and cook for 1 minute until fragrant. Then, add broccoli, bell pepper and red chili for 5 minutes until vegetables are tender.
Step 3
Mix sherry, soy sauce, cornstarch, sambal oelek and sesame oil in a small bowl. Add to the pan and simmer for 3 minutes until the sauce thickens. Add chicken back to the pan and toss to coat. Serve over rice.
