Green onions, for garnish
4 c. Low-sodium chicken broth
28 oz. Diced tomatoes
15 oz. Black beans, rinsed
1 pound Ground turkey

1 tbsp. Tomato paste
1 Jalapeño, minced

Method
Step 1
In a large pot over medium-high heat, heat oil. Cook onion until soft, 5 minutes. Add garlic and jalapeño and cook until fragrant, 2 minutes more. Add tomato paste, chili powder, cumin, and cayenne and cook, stirring, 1 minute more.
Step 2
Add turkey and cook, stirring, until cooked through and golden, 5 to 7 minutes. Add black beans and canned tomatoes, stirring to combine, then add broth.
Step 3
Increase heat to a simmer and let cook, 25 minutes.
Step 4
Serve in bowls topped with green onions and cheddar.
