      • orange slices
      • fresh rosemary
      • 3 cups soda water/club soda
      • 750 ml Prosecco
      • Cranberry syrup
    • Cranberry syrup
      • 2 star anise
      • 1 sprig rosemary
      • orange peel
      • 1 cup water
      • 1 cup sugar
      • 3 cups frozen/fresh cranberries

    03 Method
    • Step 1
      Combine all the ingredients for making cranberry syrup in a saucepan and bring to a boil.
    • Step 2
      Reduce the heat and simmer for 10 minutes until the cranberries are soft and the mixture has reduced slightly.
    • Step 3
      Remove from the heat and strain through a sieve, pushing down on the cranberries with the back of a spoon to get out all the juice. Allow the syrup to cool completely.
    • Step 4
      Fill a large jug with ice and pour over the cranberry syrup. Add the orange slices and rosemary then top with the Prosecco and soda water and serve.
