      • 1 pint heavy whipping cream cold (right from the fridge)
      • 1 tsp. vanilla extract optional
      • 1 cup powdered sugar
      • 8 oz. cream cheese cold (right from the fridge) and don't use low-fat

    03 Method
    • Step 1
      Using a whisk attachment on your stand mixer, beat cream cheese and powdered sugar until smooth. Scrape down the bowl as needed.
    • Step 2
      With the mixer on slow, add vanilla and heavy whipping cream and beat until stiff peaks form.
    • Step 3
      Pipe onto vanilla (or rainbow!) cupcakes with a large circle tip starting in the center and movie outward to create little "mounds." Feel free to practice on the bottom of a cup until you like how they look.
