      • 1/2 cup chopped walnuts optional
      • 1 cup semi-sweet chocolate chips
      • 1 tsp. salt
      • 1 tsp. baking soda
      • 2 1/2 cups all-purpose flour
      • 1 tsp. vanilla
      • 1/2 cup buttermilk
      • 1 1/2 cups very ripe bananas mashed, approx. 3-4 medium

      • 1/2 cup unsalted butter
      • 1 1/4 cups granulated sugar

    03 Method
    • Step 1
      Preheat oven to 350F and grease bottom only of a 9x5" loaf pan. In a medium bowl, whisk flour, baking soda, and salt to combine. Set aside.
    • Step 2
      Cream butter and sugar until light and fluffy (2-3mins).
    • Step 3
      Add eggs one at a time, fully incorporating after each addition. Add in bananas, buttermilk, and vanilla. Beat until smooth. Add in flour mixture and mix just until incorporated.
    • Step 4
      Fold in nuts and chocolate chips. Pour batter into prepared pan and bake until a toothpick inserted into the center comes out mostly clean. Approx 1h 10mins.
    • Step 5
      Cool in pan on a wire rack for 10mins. Loosen the sides of the loaf from the pan, remove, and place onto a cooling rack to cool completely.
