    • Pea Puree
      • 1/4 cup unsweetened silk soymilk
      • 3 tbsp. olive oil
      • 1 tbsp. chopped flat leaf parsley
      • 1 tbsp. fresh lemon juice

      • 2 cups shelled English peas
    • Meatloaf
      • 1/2 cup unsweetened silk soymilk
      • 2 tbsp. olive oil
      • 1 tsp. finely chopped flat leaf parsley
      • 1/4 tsp. cumin
      • 1 tsp. garlic powder
      • 1 tsp. salt
      • 1/2 tsp. pepper
      • 2 eggs
      • 1 1/2 cups panko bread crumbs
      • 2 pounds ground turkey

    03 Method
    • Step 1
      Preheat oven to 350°F. Combine all meatloaf ingredients in a large bowl. Use your hands to mix.
    • Step 2
      Transfer meat mixture to a large bread loaf pan to form. Invert loaf pan onto roasting pan that has been lined with foil and sprayed with nonstick.
    • Step 3
      Bake meatloaf for 1 hour or until cooked through. Broil 2-3 minutes to brown top.
    • Step 4
      Drop peas into salted and boiling water for 90 seconds. Drain and transfer to an ice bath for 2-3 minutes. Drain and set aside 1/2 cup peas.
    • Step 5
      Transfer the remaining 1 1/2 cups peas to blender or food processor. Add the remaining puree ingredients and blend until smooth.
    • Step 6
      Serve meatloaf topped with pea puree and whole peas.
