dash of salt
2 cups old fashioned oats dry, uncooked
Single Serving
1 tbsp. 100% maple syrup (or more, to taste)
1/4 tsp. pumpkin pie spice
1/2 tsp. pure vanilla extract
2 tbsp. pumpkin puree
1/2 cup water
1/2 cup unsweetened almond milk
dash of salt to taste
1/2 cup old fashioned oats dry, uncooked

Method
Step 1
In a microwave-safe bowl, add oats, water, almond milk, pumpkin puree, vanilla, spice and salt, and stir to combine.
Step 2
Microwave on high until boiling, for about 2.5 minutes (Microwave times may vary. Watch out for boil-over!)
Step 3
Let sit in the microwave for 5-10 minutes to thicken.
Step 4
Remove from microwave and stir in maple syrup.
Step 5
Add more toppings, if desired! I added chopped walnuts. Chopped dates, raisins or craisins would also be delicious.
Step 6
Add oats, water, almond milk, pumpkin puree, vanilla, spice and salt, and stir to the pot, and stir to combine.
Step 7
Bring to a boil over medium-high heat.
Step 8
Stir, reduce heat, and simmer about 3 minutes, stirring occasionally.
Step 9
Stir, remove from heat and cover for 5 minutes.
Step 10
Serve with maple syrup and optional toppings (walnuts, dates, craisins, apple slices, etc.)

Add oats, water, almond milk, pumpkin puree, vanilla, spice and salt, and stir to the pot, and stir to combine.

Place the lid on, lock to sealing, and set the pot to a low pressure on 1 minute.

Allow the pot to release naturally for 8 minutes, and quick release any remaining pressure.
