1 tsp. kosher salt (scant)
1 tsp. baking soda
1/4 cup cornstarch
1 1/2 cups all-purpose flour
1 egg yolk, large
1 egg, large
1/4 cup granulated sugar
3/4 cup light brown sugar, loosely packed
3/4 cup unsalted butter (1 1/2 sticks), softened
1 cup creamy peanut butter

Method
Step 1
Preheat the oven to 375℉, and line baking sheets with parchment paper.
Step 2
Place the peanut butter, butter, brown sugar, and sugar in a large mixing bowl and cream on medium-high speed for 5 full minutes (the mixture should look very pale and fluffy).
Step 3
Beat in the egg and the egg yolk, until smooth.
Step 4
Add the flour, cornstarch, baking soda, and salt, mixing in on low speed until just barely combined.
Step 5
Fold in the chocolate chips, and scoop 1.5-tablespoon balls of dough onto the prepared baking sheets.
Step 6
Bake for 7 to 9 minutes, or until just barely beginning to turn golden on the bottoms.
Step 7
Cool for 10 minutes on the baking sheet, and serve.
