Ingredients
Thinly sliced fresh red chilli, to serve
lime juice
100 g snow peas, halved diagonally
1 bunch baby pak choy, halved lengthways
180 g soba noodles
1 lemongrass stem, halved lengthways
1 5cm-piece fresh ginger, peeled, thinly sliced
1/4 cup soy sauce
4 cups chicken broth, chicken meat reserved

Method
Step 1
Bring chicken broth to boil in a large stockpot over high heat.
Step 2
Add soy sauce, ginger, and lemongrass. Reduce heat to medium. Simmer for 5 minutes.
Step 3
Add noodles. Cook for 4 minutes, adding the Pak Choy, snow peas and reserved chicken meat in the last 2 minutes of cooking. Stir in lime juice. Serve with chili.
