Ingredients
1 packet soba noodles
6 baby corn
1 small bunch bok choy
1 carrot, finely sliced
4 cups Chicken or Vegetable Stock
1/4 cup Soy Sauce (or coconut aminos)
1 tbsp. Apple Cider Vinegar
1 tsp. ginger, minced
2 cloves garlic, crushed
1 tbsp. olive oil (or sesame oil)
2 chicken breasts, deboned and sliced into strips

Method
Step 1
In a medium-size saucepan, combine chicken, soy sauce, garlic, ginger, apple cider, and olive oil.
Step 2
Heat until chicken is just cooked (about 3 – 5 minutes). Stir prevent any sticking to the pan.
Step 3
Add the broth and bring to the boil. Cover and simmer for around 8 minutes until chicken is cooked through completely.
Step 4
Add noodles, corn, and carrots. Cover and simmer for two minutes. Noodles will soften.
Step 5
Turn off heat and add bok choy leaves. Cover and let the pot sit until bok choy has wilted.
