      • Himalayan salt
      • 1/2 tsp. dried oregano
      • 1/2 cup mozzarella cheese
      • 4 tbsp. tomato sauce
      • 1 tsp. onion powder
      • 1/2 tsp. garlic powder
      • 1/2 cup grated parmesan cheese
      • 1/2 cup whole grain breadcrumbs
      • 2 tbsp. extra virgin olive oil
      • 2 boneless, skinless chicken breasts

    03 Method
    • Step 1
      Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper. Set aside. Wash and dry chicken breast with paper towels. Season with salt.
    • Step 2
      In a shallow bowl, combine breadcrumbs, grated parmesan cheese and spices.
    • Step 3
      Brush olive oil on each side of chicken breast and then dip chicken in breadcrumb mixture, pressing to coat. Place onto a prepared baking sheet.
    • Step 4
      Spoon homemade tomato sauce on each chicken breast. Top it with mozzarella cheese. Season with oregano to taste. Place into oven and bake 40 minutes.
    • Step 5
      Serve warm with whole grains, salad or vegetables.
