Roasted Garlic Mustard
Salt and pepper
⅓ cup maple syrup
½ cup Dijon mustard
10 garlic cloves
Scallion-Bacon Ketchup
1 tbsp. Worcestershire sauce
¼ cup chopped scallions
¼ cup chili sauce
½ cup ketchup
4 pc bacon, plus 1 Tbsp reserved drippings
Red Onion Marmalade
½ tsp. pepper flake
3 tbsp. cider vinegar
¼ cup olive oil
2 large red onions, diced

Method
Step 1
Red Onion Marmalade:
Cook red onion and olive oil in a skillet over low heat, covered, until golden, about 30 minutes. Add cider vinegar and pepper flake. Season with salt. Cook until thick, about 20 more minutes.
Step 2
Scallion-Bacon Ketchup:
Cook bacon until crisp; drain on paper towels, reserving the drippings. Combine with remaining ingredients plus 1 Tbsp bacon drippings.
Step 3
Roasted Garlic Mustard:
Roast the garlic cloves in foil for 30 minutes at 400°F. Squeeze the garlic out of its skin and puree. Combine with remaining ingredients.
