This is a great one for when you have the barbecue going but it is equally delicious if you just roast the asparagus in the oven.     • Salsa
      • 2 tbsp. olive oil
      • 1 tbsp. finely chopped mint
      • 1/2 tbsp. lime zest
      • 1/2 tbsp. lemon juice
      • 1 tbsp. lemon zest
      • 1 red chilli, no seed and finely chopped
      • 1 tbsp. radishes, finely chopped or sliced

    03 Method
    • Step 1
      Combine all your salsa ingredients in a bowl and mix well. Rub the asparagus in olive oil and season with salt.
    • Step 2
      Heat your barbecue/griddle pan to high heat. If using the oven set it to 250 degrees F setting.
    • Step 3
      Grill asparagus for 5 mins either side (or leave them for 10 mins in the oven shaking halfway through).
    • Step 4
      Arrange asparagus onto a serving plate. Spoon over salsa and serve.
