Sloppy Joe Quesadillas

      • 15 oz. BBQ sauce
      • 12 corn tortillas
      • 2 cups shredded Mexican blend cheese
      • 1 pound ground turkey

    03 Method
    • Step 1
      Spray a medium skillet with cooking spray, and heat over medium-high heat. Add ground turkey and cook until heated through, breaking up meat as it cooks.
    • Step 2
      Reduce heat to low, and stir in BBQ sauce. Cook until heated through.
    • Step 3
      Heat a large skillet or griddle over medium-high heat. Place tortillas on a hot skillet, and spread a thin layer of cheese over the tortilla. Scoop BBQ sauce meat over half the tortilla. When cheese is melted, fold cheese half over the meat half to make a semi-circle quesadilla.
    • Step 4
      Transfer the semi-circle quesadilla to a serving plate. Repeat for all tortillas. Serve warm.
