This also means that we need to have a recipe box packed full of delicious vegetarian sloppy joes we can eat. As the name states, these are pretty sloppy so a napkin is most likely needed if you don’t want to stain your pretty t-shirt (we might have done that a few times..), but they are totally worth it! 6 servings Ingredients: 1/4 tsp. black pepper 1/4 tsp. salt 1/4 tsp. ground cumin 1 tsp. chili powder 1/2 tsp. mustard powder 3/4 tsp. smoked paprika 1 tsp. tamari 2 tsp. apple cider vinegar 1 tbsp. pure maple syrup 1 tbsp. ketchup 1 cup tomato sauce 2 cloves garlic, minced 1 small shallot, diced 1 tsp. olive oil 6 hamburger buns 6 oz. coleslaw 1 1/2 cups cooked chickpeas, rinsed and drained 1/2 cup dry green lentils

    02 Ingredients
    • BBQ Sauce
      • 1/4 tsp. black pepper
      • 1/4 tsp. salt
      • 1/4 tsp. ground cumin
      • 1 tsp. chili powder
      • 1/2 tsp. mustard powder
      • 3/4 tsp. smoked paprika
      • 1 tsp. tamari
      • 2 tsp. apple cider vinegar
      • 1 tbsp. pure maple syrup
      • 1 tbsp. ketchup
      • 1 cup tomato sauce
      • 2 cloves garlic, minced
      • 1 small shallot, diced
      • 1 tsp. olive oil
      • 6 hamburger buns
      • 6 oz. coleslaw
      • 1 1/2 cups cooked chickpeas, rinsed and drained
      • 1/2 cup dry green lentils

    03 Method
    • Step 1
      Place lentils in a medium-sized pot and cover with 1 cup of water and a pinch of salt. Bring to a boil, reduce to a simmer and cook lentils until tender and cooked through, 20-25 minutes.
    • Step 2
      Heat a large pan over medium heat and add the olive oil and shallots. Season with a pinch of salt and cook for 2-3 minutes. Add the garlic and cook for 1 more minute.
    • Step 3
      Add the remaining BBQ sauce ingredients and cook for 5 minutes, stirring occasionally. Add the cooked lentils and chickpeas to the BBQ sauce and cook for another 5-10 minutes until everything is heated through.
    • Step 4
      Scoop the sloppy joe mix onto the buns and top with coleslaw if desired.
