Method
Step 1
Preheat oven to 400 degrees F. Sprays a rimmed 18 by a 13-inch baking sheet with non-stick cooking spray.
Step 2
Place sweet potatoes and brussels sprouts on a baking sheet. Drizzle with olive oil then to toss to evenly coat.
Step 3
Sprinkle bacon over everything then roasts in preheated oven 15 minutes. Remove from the oven.
Step 4
Add chicken, red onions, garlic, and rosemary then season everything with salt and pepper and toss to evenly coat. Spread into an even layer (don't overlap chicken pieces).
Step 5
Return to oven and roast until chicken has cooked through about 17 - 20 minutes longer.
Step 6
Drizzle everything with balsamic glaze, sprinkle with parsley and serve immediately.
