I don't know many people that would consider pork chops their favorite cut of meat. How could they even compete with bacon? Honestly, they never stood a chance. While we agree that the method is certainly delicious. This recipe to give you all the flavors of the classic dish without so much fat. We use a mere 1/3 cup of flour for four pork chops, and fry them in just 2 tablespoons of olive oil. A lovely sauce is made using wine and chicken stock and, along with petite green peas and roasted potatoes and onions, creates a mouth-watering meal with all the taste of the classic favorite dish.

You can remove the chops from the oven at exactly 145°F, If you prefer some pinkness in pork dishes, it's easier to achieve with the thicker type chops. For these pork chops with vinegar and sweet peppers, you better use rib chops, but center-cut pork chops, which contain a portion of tenderloin, can be used instead. To keep the chops from overcooking and becoming tough and dry, they are removed from the oven when they are just shy of fully cooked; as they sit in the hot skillet, they continue to cook with residual heat.
