Classic French toast is made with a hint of citrus and turned into jam sandwiches cut into "fingers". A fun treat for kids in the morning! WHISK together eggs, milk, salt and vanilla in a shallow bowl. Set aside. SPREAD jam evenly over four of the slices of bread and top with the remaining slices of bread. Trim the crusts if desired and cut each sandwich into three equal strips. PREHEAT a large non-stick skillet over medium heat. Lightly grease the pan. Dip each sandwich strip into the egg mixture to coat. Place in the skillet and fry for 2-3 minutes per side or until golden brown.
